Green Tea

Teas that have had their leaves after they are plucked (picked) quickly have a little heat added to them to stop the oxidation process. They are only to be steeped between 160-175 degrees. Do not use boiling water! The teas usually will become astringent and sometimes (very) bitter. They should have a nice flavor that doesn’t overpower the tea nor a bite or bitterness to it.
