A subcategory of Dark Teas. Puer is from the Yunnan province in China that has been held in secret of how they produce it. It has a combination of oxidation and fermentation process. The Sheng(green or uncooked) puers will continue to age over the years. Puer comes in Sheng and Shou (cooked). These can be steeped for 30 seconds to 30 minutes and not have any bitter taste.
